Chicken Chili Stew
Ingredients: 1/2 onion chopped 1 clove garlic minced cooking spray or small amount olive oil 2 cups diced raw chicken 2-4oz cans green chiles 1-16 oz can stewed tomatoes 1 cup water 2 cups diced potatoes 1/2 cup frozen or canned corn 1/2 can black beans rinsed and drained Directions: Saute onion and garlic with spray or oil on low heat until tender. Add chicken and brown. Add chiles, tomatoes, potatoes and cook until tender. Mix in corn and beans and heat thoroughly. Top with low fat shredded cheddar cheese. Serve with mixed green salad and home made corn bread. ENJOY!!
